Manage food and beverageoperations to ensure quality service and standards while delivering a guestexperience that is unique.

EssentialDuties and Responsibilities
As a member of the senior management team responsible for living the core purpose, the mission, our core values and golden rules and drive them through the hosts in the department.
To identify the right team, responsible for the recruitment in the department liaising with the HR Manager as per the household recruitment strategy.
To set up lines of communication within your department and to ensure that jobs are specified and descriptive
To ensure the team is empowered and autonomous
To set up a structured meeting schedule to ensure all information, actions and todos are disseminated and carried out / followed through.
To set up communication tools to ensure there is full transparency for the operation, Skype to be the main tool
To action and disseminate the contents of the household annual plan to ensure all the hosts are aligned and have targets to achieve.
To look at setting up forums and task forces for specific projects.
To create a positive environment by ensuring we all work well as a team
Coordinates with the sub-divisions of the household, liaising with other departments and household sister properties with events and logistical issues
To share information and to ensure all the hosts are aware of what is expected of them
To ensure that all policies and procedures are communicated to the team and to ensure that all hosts are confident on what they need to do
To set up skype forumswith key individuals to ensure that immediate action is taken on the variousevents within the department and among the senior management team.
To set up daily briefs for 10 to 15 minutes with your team.
To set up One on one meetings with your direct reports.
To attend weekly head of department meetings to identify anyissues that needs to be addressed between the departments.
Inter departmental meetings to setup to improve team work betweendepartments. Quality circle meetings will concentrate on specific problem andhow to solve them.
To create an orientation and departmental orientation programme for all the hosts with the assistance from the HR manager
To drive the performance management system in line with the household standard liaising with the HR Manager ensuring that every host participates on it.
To ensure that there is a proper holiday scheduling and reporting
To facilitate with the HR manager the departmental orientation programme or the induction.
To review and re create all the job descriptions and job specifications to ensure they are consistent.
To ensure that the household plan and departmental objectives are followed through.
To work with the HR manager at on the job training and to ensure that it is logged as a training session but outside of the 4 hours above.
To write and set up a directory of P&P related to F&B Services, SOPs and frequently update them as required.
Key Performance index to be created by you for your department to follow and update the progress on a monthly, bi monthly, half yearly and yearly basis.
Actively work with the other heads of department and key team members to ensure the house hold objectives are met.
To ensure that all cutlery crockery, glassware and silverware is properly logged, stored and cleaned
To ensure that all mis en place areas are kept clean and orderly
To ensure the stores are kept clean orderly and logged
To put together a capital expenditure list for your department and to ensure that all your capital requirements are listed
To ensure you have workable function sheets in order to ensure that all function requirements from the various departments are met
Calculating costs on F&B items
Developingcreative ideas for implementation of new items together with the F&B team
Ensurecompliance with set operational policies and standards by : Inspecting various serviceareas on a regular basis
Manageday-to-day staffing requirements, plan and assign work, and establishperformance and development goals for team members.
Provide mentoring, coachingand regular feedback to help manage conflict and improve team memberperformance.
Developing effective host relations
Motivating host to attend sports events and outdoor activities
Ensures all staff actively participate in the preservation of the environment and reuse, recycle or reduce whenever possible
Establish and achieve quality satisfaction goals.Respond in a courteous and prompt manner to all guest questions, complaintsand / or requests to ensure a high level of guest satisfaction.
Look for ways to improve the Host SatisfactionSurvey result in the department.
Ensure every host is properly trained on qualityand service standards, has the necessary tools and equipment, and is empoweredto carry out job duties.
Overseeing supply of support services such as maintenance and installation of machinery, cleanliness adequate staffing levels, etc.
Ensuring that F&B hosts are fully trained in compliance with the hygiene regulations related to the Household.
Conduct proper food and beverage inventoryprocedures. Determine minimum and maximum stocks for all food, beverage,material, and equipment.
Ensure thesecurity and proper storage of food and beverage products, inventory andequipment, and replenish supplies in a timely and efficient manner whileminimizing waste.
The ideal candidate will be a hands-on professional with a solid food &beverage background and the passion for quality and excellence.
