The Sous Chef at Hamad International Airport (HIA) Lounges is responsible for the day to day operation in the kitchen during an assigned shift.
In this role, you will manage the Kitchen brigade and provide exceptional levels of culinary standards in accordance with menu specifications set by the company.
You will ensure that international menus presented to our premium passengers in the various lounges are of the highest caliber, has excellent presentation, has correct temperature and hygienically prepared under safe food standards.
You will ensure that food items and ingredients are as per specifications and that the kitchen is adequately stocked with appropriate quantities.
You will plan and guide staff on food preparation especially during special functions. You will ensure that food hygiene and safety rules are maintained within specified work areas.
You will monitor food quantities served and provide reports on menu engineering on a continuous basis. You will maintain First In First Out and ensure that the kitchen stores are maintained in perfect order.
You will communicate and work together with other team members assigned in different areas such as the kitchen, stores and operations with the objective of seamless integration of duties and functions.
You will oversee the preparation of food and monitor presentation. You will speak to premium passengers as and when time permits, provide a description of menu items and receive suggestions and feedback.
You will implement and analyse innovative menu tailored for customer preference in the region by keeping up with market trends.
You will regularly assess the kitchen brigade for their culinary, safety, hygiene and product knowledge.
You will have Bachelor's degree or equivalent preferably in culinary studies and standards. You will have 5 years of job-related experience, 2 years of which as a Sous Chef or similar position.
You demonstrate at all times the importance of upholding the highest personal and professional standard and have positive and passionate attitude towards the customers.
You are a team player with a positive outlook and a keen eye for details. You have well-developed social skills, able to handle all type of people and situation and have high level of versatility and flexibility to meet the varied needs and expectations of customers.
