Sous Chef Pastry
Under the direction of the Pastry Chef and within the limits of established Kempinski procedures, assists in the direction of all aspects of the pastry production and operations.
Key Responsibilities :
Assist in creating new pastry and dessert menus.
Prepare and implement menus and specialty dishes for pastry.
Maintain standards of food purchasing, preparation, quality, hygiene, sanitation and decoration.
Follow culinary standards specific for Pastry / Bakery.
Maintain up-dated operations manuals for pastry production and stewarding sections.
Support the Pastry Chef in leading the Pastry staff in preparation and presentation of all food items in accordance with the hotel’s food and beverage standards and standardised menu guidelines.
Follow through all matters related to food purchasing for pastry and bakery.
Liaise with the Chief Steward in order to ensure high standards of cleanliness are maintained in all areas of the Pastry / Bakery kitchen, such as machinery and small kitchen equipment.
Coach, counsel and discipline staff, providing constructive feedback to enhance performance.
Work with Pastry Chef in the preparation and management of the department’s budget.
Assist in controlling and monitoring pastry costs on an ongoing basis to ensure performance against budget.
Adhere to occupational, health and safety legislation, policies and procedures.
Adhere to property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly.
