Job Summary

The Pastry Chef de Partie is responsible for ensuring that all meals coming from the outlet are well prepared with regard to quality, consistency, eye appeal, taste and food cost.

He / she is expected to provide training for all staff; meet corporate quality standards; and assist in establishing and enforcing food specifications, portion control, recipes and sanitation.

Main Duties

  • Works closely with Pastry Chef and the Sous Chef / Executive Chef and keep them informed of Food & Beverage issues that arise.
  • Assisting the Pastry Chef in decorating pastries using creative techniques etc. and ensuring the presentation will be beautiful and exciting
  • Coordinates and monitors all phases of loss prevention in kitchen areas.
  • Monitors stocks for baking ingredients such as flour, sugar and makes appropriate orders within budget
  • Ensures compliance with SOP’s in all outlets
  • Attends all meetings as required.
  • Knows and enforces all local health department sanitation laws
  • Works closely with the Pastry Chef and Sous Chef / Executive Chef to implement menus
  • Assesses food portion size, visual appeal, taste and temperature of items served
  • Checks all stations at the end of every shift for proper food storage and sanitation.
  • Oversees daily activities such as preparation for all food, items, sanitation of the outlets, receiving daily inventories, log on report and food cost report.
  • Communicates the status of all pastry food production to the Pastry Chef
  • Other Duties

  • Prepares daily food production sheets
  • Ensures highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis.
  • Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.
  • Full awareness of all menus items, recipes, methods of production and presentation standards.
  • Follows good preservation standards for the proper handling of all food products at the right temperature.
  • Ensures effective communication between staff by maintaining a secure and friendly working environment.
  • Consults daily with Pastry Chef / Sous Chef or Executive Chef on the daily requirements, functions and also about any last minute events.
  • Always meets cost targets as directed by the Pastry Chef.

  • At least 3 years as a similar role in a hospitality industry
  • Diploma in culinary / pastry arts
  • In addition any health and safety and food hygiene courses
