MainResponsibilities

  • Assisting the Executive Pastry Chef to oversee alloperational and administrative aspects of the Main Pastryproduction kitchens (including Banquet, In-Room Dining, Mosaic,Mandarin Cake Shop and Gelato) as appropriate and be able topriorities the required level of engagement in all areas dependingon business volumes and other related parameters
  • Create and maintain a great synergy between Outlets andMain Production Pastry and Bakery kitchen and any related outletskitchen to assure maximum efficiency
  • Assistthe Executive Pastry Chef to plan menus, prices and promotionalevents for the Banquet and all restaurants in order to maximizerevenue generating opportunities in line with marketdemands
  • Work closely with Cake Shop &Gelato Manager in the presentation of the pastries and thepackaging of related items in their respective outlets
  • Assisting the Executive Pastry Chef to review menus inregard to popularity of dishes, food cost and seasonality with therespective Restaurant Manager and suggest new menu proposals to theExecutive Chef
  • Ensure plating guides andstandard setup guides are up to date and distributedappropriately
  • Ensure plating guides andstandard setup guides are followed according to set dishdescription, cooking method and presentation image
  • Ensure that all pastry items are prepared in the mostauthentic way as standards set by the Executive PastryChef
  • Observe all aspects of the businessforecasts and plan effectively to make most efficient arrangementsfor manpower, equipment and supplies accordingly
  • Supervise the maintenance and cleanliness of the Kitchensand stewarding area at all times and support to carry out dailychecks and monthly walk-throughs with the respective stewarding andengineering colleagues
