JOB DETAIL Hygiene Supervisor By Centara Hotels Resorts Posted on 27 Jul 22 Share Job Function To manage Stewarding Hygiene department maintain a highest hygiene standard and ensure all work areas are adhering government food safety regulations Duties Responsibilities Supervise and coordinate Hygiene and Stewarding operation following hygiene and food safety standards Advises on proper food handling practices and provides food hygiene training for all new hires Provides technical advice on product labelling issues for fulfilling government requirements Follow all company and safety and security policies and procedures report maintenance needs accidents injuries and unsafe work conditions to manager To perform all assigned duties in an efficient and technically correct manner follow the management policy house rules and regulations orders or superiors adhere to procedures of the training manual and achieving a high standard leading to total guest satisfaction Responsible for effective and efficient maintenance of records related to the hotels sanitation and hygiene efforts programme Continually liaises with external agencies laboratory government bureau health practitioners etc on sanitary matters Supervise the Kitchen Stewards ensuring maximum hygiene standards of employee Canteen Support the Back of House Team in training and development Report faults misused or damaged equipment issues to the Back of House Manager Executive Chef i c F B and or Chief Engineer Assist in the stock take of equipment and other items as required To perform any other duties set by hotel policies management or his her direct supervisor which are not included here Criteria Bachelor s Degree in Food Science or equivalent Minimum 2 3 years work experience as Hygiene Officer or above in a hotel or similar large restaurant complex preferable prerequisite is experience in the hotel industry Capable of handling multifaceted projects and of working under pressure Good communication and guest relations skills a proactive problem solver GCC experience is plus Excellent computer and communication skills Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards Knowledge in HACCP ISO 22000 ISO 9001 and OHSAS 18001
