  • Prepare all meats and fish to thehighest quality and within company guidelines
  • Ensure effective food storage and stockrotation
  • Report any food spoilage / wastage tothe Head Chef
  • Keep all working areas clean andtidy and ensure no cross contamination
  • Assistin positive outcomes from guest queries in a timely and efficientmanner
  • Establish and monitor portion sizes forcuts of meat and fish
  • Responsible forcontrolling costs without compromising standards, improving grossprofit margins and other departmental and financialtargets
  • Assist other departments and maintaingood working relationships
  • Responsible forcomplying with and training Health and Safety and Food Safetystandards and legislation
  • Comply with hotelsecurity and fire regulations
  • Reportmaintenance, hygiene and hazard issues
  • Beenvironmentally aware
