  • The kitchen staff arrives earlyto organize the kitchen and do food prep to streamline cooking andmeal presentation, including washing, peeling, and cutting fruitsand vegetables;
  • mixing ingredients for dishes; and cutting andseasoning meats.

  • The kitchen staff organizescustomers’ plates before the waitstaff orsometimes even the kitchen staff bring the final productto the customer.
  • They have a working knowledge of theday’s meals and menus and understand what each dish callsfor before delivery.

  • The kitchen staff workswith management and head cooks to receive, stack, and properlystore food in kitchens, cold storage, and storerooms.
  • They transferfood and supplies to the kitchen as needed.

  • The kitchen staff is responsible for ensuring all areasof the kitchen, food prep, and food storage areas are clean andproperly sanitized.
  • This includes washing dishes and cookingequipment, cleaning floors, sanitizing countertops and cuttingboards, and maintaining all areas to health codestandards.
