  • Prepare various cuts of meat asrequired, including correctly preparing beef, lamb, and pork cuts,and labeling the type of cut, date, and destination ofmeats.
  • Prepare ingredients for cooking,including portioning, chopping, and storing food.
  • Weigh, measure, and mix ingredients.
  • Prepare and cook food according to recipes, qualitystandards, presentation standards, and food preparationchecklist.
  • Maintain kitchen logs for foodsafety program compliance and food logs for all foodproducts.
  • Monitor food quality while preparingfood.
  • Set-up and break down workstations.
  • Wash and disinfect kitchen area,tables, tools, knives, and equipment.
  • Completecleaning checklists.
  • Check and ensure thecorrectness of the temperature of appliances and food usingthermostats and thermometers.
