JobSummary

The Chef de Partie-Sushi is responsible for preparing all food items, based onstandardized recipes, for the Restaurants, Room Service, EmployeeCafeteria and Banquets, while maintaining the highest standards toproduce an appealing and appetizing product.

He / she is alsoresponsible for ensuring the cleanliness, sanitation and safety inthe kitchen and work areas while minimizing waste and maximizingcost / production ratio.

GeneralRequirements

  • Maintaina warm and friendly demeanor at all times.
  • Mustbe able to effectively communicate both verbally and written, withall level of employees and guests in an attentive, friendly,courteous and service oriented manner.
  • Must beeffective at listening to, understanding, and clarifying concernsraised by employees and guests.
  • Must be able tomultitask and prioritize departmental functions to meetdeadlines.
  • Approach all encounters with guestsand employees in an attentive, friendly, courteous andservice-oriented manner.
  • Attend all hotelrequired meetings and trainings.
  • Maintainregular attendance in compliance with Wyndham Hotels &Resorts Standards, as required by scheduling, which will varyaccording to the needs of the hotel.
  • Maintainhigh standards of personal appearance and grooming, which includeswearing the proper uniform and nametag.
  • Complywith Wyndham Hotels & Resorts Standards and regulations toencourage safe and efficient hoteloperations.
  • Maximize efforts towardsproductivity, identify problem areas and assist in implementingsolutions.
  • Must be effective in handlingproblems, including anticipating, preventing, identifying andsolving problems as necessary.
  • Must be able tounderstand and apply complex information, data, etc. from varioussources to meet appropriate objectives.
  • Must beable to cross-train in other hotel relatedareas.
  • Must be able to maintain confidentialityof information.
  • Must be able to showinitiative, including anticipating guest or operationalneeds.
  • Perform other duties as requested bymanagement.
  • FundamentalRequirements

  • Havethorough knowledge of menus and the preparation required, accordingto hotel standards.
  • Maintain cleanliness andorganization of all storage areas.
  • Completenecessary food and station preparation prior to the opening of therestaurant in order to ensure that guests are served promptly andefficiently during the Restaurant and Room Service operatinghours.
  • Prepare and display buffet food itemsaccording to the hotel standards.
  • Proficiencyin the following cooking techniques : charbroiling, poaching,deep-frying, sauté, braising, roasting andpar-cooking.
  • Recognize quality standards infresh vegetables, fish, and dairy and meatproducts.
  • Knowledge of herbs and spices andproper use ofeach.
  • Maintain clean andsanitary environment with knowledge of proper handling, storage,and sanitation.
  • Prepare food for Banquets, adrequired, following specifications on Banquet EventOrders.
  • Prepare and service food for theEmployee Cafeteria as specified by the Chef or KitchenSupervisor.
  • Prepare allfoods following hotel standard recipes. Preparation of specialswill be under the direction of the Chef or KitchenSupervisor.
  • Breakdownbuffets and kitchen line, storing food and equipment properly atthe end of each meal period.
  • Work banquet foodstation as scheduled by the Chef or KitchenSupervisor.
  • Know the location and operation ofall fire extinguishing equipment.
  • Practice safework habits at all times to avoid possible injury to self or otheremployees.
  • Use Production Charts as specifiedby hotel’s standards.
  • Be able tosupport any position in the Kitchen that is in need ofhelp.
  • Follow all Health Department and Companyregulations in regards to food and storage standards andsafety.
  • Be able to operate and maintaincleanliness of all kitchen equipment.
  • Maintaina Clean As You Go policy.
  • Assist in storage and rotation of fooditems according to hotel procedures.
  • Sign keysout and back in under supervision asneeded.
  • Education &Experience

  • HighSchool diploma or equivalent and / or experience in a hotel or arelated field preferred.
  • Culinary experiencerequired.
