In this position, the responsibilities include, but not limited to, the following :
Responsible for Kitchen operations during a designated shift by controlling all aspects of kitchen production, training and supervising kitchen staff to ensure that all production and sanitation served in lined with the quality assurance program and HACCP principles.
Monitor food delivery to all locations to ensue that all production plans meet the requirements
Support the Sou Chef to forecast requirement of the sections for upcoming cycles together with stores to ensure availability of raw materials and avoid any possible wastage due to excess in stocks.
Ensure that the main dining facility production and presentation are correct and in line with the demand and requirements
Reconcile the shift requirements, placing requisitions and updating the system at the beginning and end of each shift
Handover clean, sanitary and organized work station at the the end of each shift to ensure hygienic work place are maintained at all time.
About You :
To be successful in this role, you should have :
Trade or Vocational qualification
Professional cooking certification, diploma or degree
Minimum 4 years of job - related experience in a supervisory level
Fluency in the English language- both written and spoken
Can demonstrate a working knowledge of all sections
Has working knowledge and experience of HACCP principles
High personal standard in production and recipe execution
Proven ability to work under pressure to defined timescales
Strong interpersonal and team working skills
