Head Chefby AMWAJ OFFICE HRMSPosted Jan 16 2017Heading all aspects of the kitchen operation andcoordinates functions and activities in all locations Responsible for implementing and following theculinary standards and overseeing the culinary operations of the units andexternal delivery catering Responsiblefor supervising all kitchen functions including purchasing preparation andmaintenance of quality standards sanitation and cleanliness Menuplanning creation implementation and staff training on all the new menusincluding all the special functions VIP functions board meetings competitions and weddings Responsiblefor the provisioning and preparation of food throughout the Club s Operations both on and off the premises and ensure highest standard of hygiene andcleanliness in the production area Supervises the preparation of dishes served in alloutlets ensuring that recipes are followed by tasting dishes and sauces onbehalf of the supervisor and suggests additional ingredients Assists in any of the kitchen areas under hiscontrol and participates in all other jobs in the kitchen when circumstancesrequired including baking confectionery preparation of sauces boning andpreparing fillets so that timely preparation of the meal is achieved Performs related duties as assigned attending special functions supervising the delivery of food to outsidevenues monitoring staff attendance and presentation Prepareskitchen requisitions and obtains approval of the Group Clubs Manager prior todrawing the items from stores and ensures that the commissaries drawn areaccording to the requisition made and quality of the products as percontractual terms Checks all incoming foodstuff supplies to ensure the qualityof items received and to reject those unsuitable for use Responsible for staff feeding and on jobtraining of new staff on change of contract Responsible for kitchen cleanliness to the highest accepted standard ofHealth and Hygiene Assist incontrolling cost by minimizing spoilage waste proper storage and strictportion control Performs other relatedduties as assigned by Superiors Completion ofIntermediate Education followed by 3 years Diploma in Catering Cookery from arecognized Catering College or Institute Should speak and Write English andpreferably Arabic Minimum of 5 yearsexperience performing similar duties in a reputable Hotel Restaurant or Clubcovering international cuisine
